Chocolate Peanut Butter Overnight Oats

When you eat the same food for breakfast nearly every day, we’ve found it’s important to change the variety of ingredients in order to avoid never wanting to eat it ever again.
On our first real day in Bulgaria, I came across peanut butter heaven. In the city of Petrich, I found a woman who sold local handmade peanut butter. In large quantities.
Despite a recent conversation about my ever growing bag of food, I ignored logic and went ahead and purchased the large jar. I mean, we hadn’t seen freshly ground peanut butter throughout our entire visit to Europe. I couldn’t not buy the large jar. It was hard enough purchasing only one.
I knew the perfect recipe to celebrate my find.
Vegan Chocolate Peanut Butter Overnight Oats.
This recipe comes together in just minutes, so even when we’ve had a long day on the bike, I can always summon the energy to throw the ingredients together just before bed. The oats cook themselves overnight in our 16oz Klean Kanteen Vacuum Insulated Food Canister, which just happens to be the perfect size to make one serving of these oats. The insulation prevents any fresh plant milk from going bad overnight if the temperature fails to act as a refrigerant and its tight seal prevents not only spillage, but also keeps any critters from getting into our breakfast.
I carry around a gallon-sized ziplock bag of pre-made muesli, the ingredients of which change depending on what I can find in the stores. There are always oats, and groats (if I can find them), seeds of some sort, generally sunflower or pumpkin, some kind of nut like almonds or hazelnuts, and dried fruit such as cranberries, raisins, or goji berries (which are SO cheap in Europe).
This recipe works with either oats alone or a mix like I have. Either way, it’s the chocolate and the peanut butter who are the stars of the show here. This recipe is like waking up to a chocolate peanut butter pie, so basically, you’re eating dessert for breakfast, only it’s pretty healthy. You really can’t go wrong with that.
We eat overnight oats on a daily basis. They're so quick, easy, and delicious that after six months, we have yet to sicken of them. Mixing up the ingredients prevents us from tiring of our go-to breakfast before our ride. The combination of raw cacao power and peanut butter creates a creamy texture so these chocolate peanut butter overnight oats taste like dessert for breakfast. You can't go wrong with that.
- 1/2 cup rolled oats
- 2 tbsp creamy peanut butter
- 1 tbsp raw cacao powder
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 1 tbsp liquid sweetener of choice maple syrup, agave, etc.
- Pinch of salt if using unsalted peanut butter
- 1 tbsp plant-based milk powder + 3/4 cup of water OR 3/4 cup of plant-based milk
- Add dry ingredients, including milk powder to your lidded vessel of choice (anything 16oz or larger will fit the contents) and stir together.
- Pour the water or milk into the canister and stir to combine.
- Secure with a tight lid and allow to sit overnight.
- In the morning, open and consume.
Topping suggestions: Raw cacao nibs, banana slices, nuts. Please note that the total cooking time includes soaking overnight. Klean Kanteen generously provided our food canister and we love it. We wouldn't tell you to use it otherwise.
I just ate the most amazing breakfast recently. It was from the trailhead coffee shop in Portland, but could be recreated for bike camping. You start with a long diagonal piece of baguette, and add ricotta (could be omitted), then add slices of avocado. The secret amazing ingredient is a generous sprinkling of lemon zest on top, and lots of fresh pepper and sea salt.
Avocado toast with lemon zest?? That sounds amazing. I shall have to give it a try when we find avocados again…hello South American breakfast!
Also, breakfast burritos are the best. And salt bagels. We miss you, running every week. It’s just starting to be dark in the morning, so we begin again in the twilight. Last night there was a full moon and a brilliant crimson sunrise (and I didn’t actually go running this morning, but the boys did). Anyway, the mud is coming out. Sending hugs.

Oh yeah! Breakfast burritos are at the top of my list! With a particularly spicy salsa, and an untraditional scrambled eggs with spinach! Too yummy!

The raffle copter was hard! I sure hope I cometed all of it correctly! That being said overnight oats are a staple at out house. My fave is steel cut oats with almond milk, cacao & honey. My kiddos prefer sun butter added. Hope your journeys are fun and safe 😉

What else do you use your food canister for?
We use it for a lot of different reasons! Aside from overnight oats, I macerate fruits in it overnight to top our oats, precook lentils or quick cooking grains like cous cous. I put in leftover soup to have warm for lunch the next day. It protects delicate fruits like peaches, berries, or tomatoes. There’s a heap of uses for our food canister!

Dang! That looks delicious, and beats the heck out of cold granola, which is my go-to bike touring food. Sometimes I go full-on luxury and warm up oatmeal. Yep, I’m quite the asset in the cooking department…

Jen, this breakfast sounds divine! Do I have to be touring to have it? As for my go-to breakfast (when not bike touring) – I love to make smoothies. I just throw whatever fruits and veggies I have in the Vitamix and power up!

Cinnamon should really be added to just about everything (at least I think so)!
My favorite is still regular old fashioned oatmeal. I’ll make it with a bit of maple syrup or use apple cider as the liquid and some cinnamon. Definitely going to try this!

We find that the canisters hold heat very well. I haven’t tested it for an entire day, but we often warm leftover soup in the morning and pour it into the canister and it’s still hot by lunch 5 or more hours later.
My go-to breakfast is GF toast with Nuttzo 7-nut butter, granola, & bananas, but I can never pass up on a big bowl of oatmeal with all the fixins!
I’ve heard of Nuttzo, but haven’t yet tried it. Something to look forward to when we get back to the U.S!

Love soup (especially chicken) for breakfast. Sounds weird to a lot of people, but it’s warm, easy to digest, and low carb (if it’s a concern ).
Leftover soup is so great for breakfast. We do that on the road when I have leftover soup. It’s filling and warming!
That looks and sounds delicious. My go to is a protein smoothie with a large handful of fresh greens, half a banana, ice and almond milk. I change up the types and flavor of protein powders and occasional add frozen berries (black, rasp and blue).
Oh, green smoothies, how I miss those. That’s my go to when we’re not on the road. I use frozen bananas to make a creamier texture.

My go-to breakfast is usually chia pudding (chia seeds in any dairy free “milk” and let it soak over night) or some type of oatmeal porridge. If I am not bale to cook it, oatmeal in milk works fine too! Top any of the two with whatever type of fruit there is available! That is few of the things that makes a great start to my day and after I have tried this I’ll probably have something to add to my list! Can’t wait to try!
